I love how leftovers from dinner the night before can be transformed into the most delicious and filling lunch in no time. Like this chicken salad! Leftover chicken is often dry and tasteless but combined with the full fat mayonnaise and cheese and avocado, we suddenly have the perfect LCHF lunch.
SERVES 1 PERSON
- 1 cooked chicken breast, diced
- 1/2 avocado
- 1,5 tablespoon mayonnaise
- chunk of cheese, dices
I had a large green juice to go with this lunch. I realize that I’d be better of chewing my veggies but sometimes that can feel like a struggle and I guess drinking my greens is better than not having them at all. To keep some of the fibers, I blended this one instead of using my juicer.
My mean greenie was made of:
- pointed cabbage
- fresh spinach
- a few frozen slices of banana
- some orange zest
