Are you ready for another pumpkin recipe? I explained to you already how I love cooking with (and eating) pumpkin in the Fall. It’s one of my favorite things about this season.
In this pancake recipe I used leftovers from the delicious pumpkin mash, I made a few days ago. I love using my leftovers for new recipes and we hardly ever through food out in this house.
These pancakes looks a bit like (yellow) brunch pancakes but don’t forget they have a salty and not a sweet taste. I find them to be more suitable in sandwiches, in the kids’ lunch boxes or eaten with soup than at a brunch table but don’t let my restrictions stop you!
MAKES 8 PANCAKES
Heat up coconut oil in a skillet and fry the pancakes on both sides. I made three at a time and they were some of the easiest pancakes I’ve ever worked with. So no panic, just go for it!
