Our family can easily handle one parent who is too busy og tied up with work. That’s life, I guess. But when we’re both too busy at the same time, the family starts to suffer. This is the situation we have right now. Søren who got promoted to a new job more than 6 months ago is still suffering under the fact that they haven’t found a replacement for him in his old job yet and is therefore working what seems like two jobs. Me, I’m really busy with a project that I’m not quite ready to reveal for you just yet. Maybe later this week! It’s such a sweet and different project!
In periods with lots of stress, I try to do something good for myself every day. Or most days. And drinking that extra mug of coffee or eating more chocolate don’t count even though both things can give an immediate energy boost. Instead, I’m talking about doing small things like going for a walk even though I have piles of work on my desk or treat myself to some extra vitamins like I did with this colorful juice.
This purple vegetable juice is pure veggies and contain no fruit. Well, it does have some lemon in it but that hardly counts for fruit, does it?
- 0,5 purple pointed cabbage
- 1 large handful of fresh spinach leaves
- 2 small beets
- 2 small carrots
- juice from 3 small lemons
- 1 chunk of ginger
- fresh coriander leaves (optional)
- water, about 700 ml
Peel the vegetables that need to be peeled and cut them all into smaller chunks. Put all ingredients in the blender, add the water and blend.
The more water you add, the thinner the juice. And vice versa. Probably goes without saying.
You should drink you fresh juice immediately as it looses some vitamins when stored. I do store mine in the fridge up to 24 hours and figure it’s still better than no veggies.
