So many amazing things are happening on my side of the screen these days but unfortunately that also takes time away from blogging. Today, I want to show you my new book and also to share inspiration for 3 delicious low carb lunches with lots of vegetables.
Earlier this week I had a girl from my Publisher come over to shoot little videos to promote my new book. My new book will be released on Tuesday so it’s pretty exciting already! Anyway, she came over, I cooked and she filmed little videos that are now being edited into short cooking videos that we can use to promote my book on Facebook and other social media.
Here’s how that looked. We made this delicious oven baked salmon with a sweet broccoli mash.

MY NEW BOOK
Last Friday my editor called and said that she was now holding the very first copy of my new book. I had her send it to my house. I’m telling you, seeing your new book for the first time is such an adrenaline rush. Every time! This is my 5th book so you would think I had gotten used to the feeling but not at all! It’s exciting and so frightening at the same time.
Their Foreign Rights Manager just presented the book at the book fare in London last week and she said that several foreign publishing houses expressed their interest. How cool would it be to have it come out in other languages too? English I can only hope for but that’s a bit tricky. But Germany has turned out to be an interesting market for my books so I’m keeping my fingers crossed.
The English title would be something along the lines of: Little Foodies – How to teach your kids to love real food❤ And the pretty looking twins on the cover are mine!
AND NOW FOR THE LUNCH INSPIRATION
These are three lunches I had this week or last week and they were pretty darn delicious. They were also quite an upgrade from my usual lunch, I must admit that. Often my lunch is something I just grab and finish by the computer. Yes, I know… mindful eating and all that. I’ll work on it. I promise!
Anyway, no recipes here. This is just for inspiration on how to make your low carb diet green and inviting with everyday ingredients.
Chicken breast, tomato, fresh basil and pesto, steamed broccolini (apparently a mix between broccoli and asparagus) and bearnaise butter on top.
Hot smoked macquerel and salmon, a boiled egg, steamed broccoli, tomatoes and bell pepper. Drizzles with a cold pressed olive oil.
Icelandic smoked trout on salad, broccoli(ni) again and a dressing made of mayonnaise and full fat sour cream mixed with fresh herbs and salt and pepper.
